On Monday 4 March, APL’s PorkStar celebrated with over 100 industry guests at NOMAD Sydney with a feast that celebrated a beautifully curated menu by the talented, executive chef Jake Ahrens and his team.  


Menu highlights included ham hock hash brown, pig’s ear chicharron and pork cheek with watercress and preserved plum. Pork was highlighted in every dish, including a stunning dessert of Turkish coffee and smoked pork fat caramel bombe Alaska.  


The evening was a celebration of all things pork and an inspiration to keep pork at the forefront of menu placement. Industry guests included chefs, restauranteurs, consumer media, and suppliers.
