Food microbiologist, Dr Laura Rood from the Tasmanian Institute of Agriculture, has been announced as the recipient of the Australian Pork Limited Award at the national ABARES 2023 Science and Innovation Awards.

Dr Rood has been working with APL on research exploring observations that pork shoulder has a shorter shelf life than pork leg, and how pH may impact this.

The award will provide funding and support for Dr Rood in a one-year research project that further explores how pH affects bacteria growth on pork. The research could lead to a longer shelf life for vacuum-packed meat.
