Moisture Infused Pork

Moisture Infused (MI) Pork has been developed to provide high quality pork products of improved eating quality for consumers. It is produced from high quality pork, using specialised equipment.  

MI Pork is pork that has been infused with a solution containing water and salts, resulting in a meat which is more tender, juicy and flavoursome - it is easy to cook and is less likely to dry out if overcooked.
 
The MI Pork Standards
The Moisture Infused (MI) Pork Standards were developed by Australian Pork Limited (APL), in consultation with industry and regulatory agencies, to protect the integrity of moisture infused technology as a means of improving the eating quality of Australian pork.

Overall, the program aims to enhance consumer trust in Australian MI pork products by integrating food safety, quality and integrity standards into company Quality Assurance (QA) programs and enable the differentiation of MI Pork product from non-certified product.

The program enables APL to license processors, retailers and food service operators to use the APL registered certification trademark (CTM) for Moisture Infused Pork. These standards have been incorporated into the QA programs of licensees and sub-licensees involved in this program.

APL requires third party auditors to audit QA systems of licensees, for food safety standards as well as eating quality and integrity standards. These are detailed in the MI Pork Certification Standards which cover all markets, including retail and food service.
